Vegan Peanut Butter Cookies

Ingredients
  

  • 1 cup 2 sticks vegan butter, softened
  • 1 cup creamy peanut butter
  • ¾ cup granulated sugar
  • ¾ cup packed light brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ cup granulated sugar for rolling (optional)

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the vegan butter and peanut butter until smooth.
  • Beat in the granulated sugar, brown sugar, and vanilla extract until light and fluffy.
  • In a separate bowl, whisk together the baking soda, baking powder, flour, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • If the dough is too thick, add 1 tablespoon of water at a time until it is easy to roll into balls.
  • Roll the dough into 1-inch balls.
  • Roll the balls of dough in the granulated sugar, if desired.
  • Place the cookies on the prepared baking sheet, leaving 2 inches of space between each cookie.
  • Bake for 12-14 minutes, or until the edges are golden brown.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
