Vegan Peanut Brittle

- 1 cup granulated sugar
- ½ cup light brown sugar packed
- ¼ cup water
- ½ cup vegan butter
- ½ cup vegan coconut cream full-fat for best results
- ½ teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 ½ cups roasted and salted peanuts

Line a baking sheet with parchment paper and have a spatula or wooden spoon ready.
Combine the sugars and water in a large saucepan over medium heat. Bring to a boil, stirring constantly, until the sugar dissolves. Then, reduce heat and simmer for 5-7 minutes, without stirring, until the mixture reaches 300°F (149°C) on a candy thermometer (or hard-crack stage - a small spoonful dropped in cold water hardens immediately).
Turn off the heat, and quickly stir in the vegan butter, cream of coconut, baking soda, and vanilla extract. Be careful, as the mixture may bubble vigorously.
Stir in the roasted peanuts until evenly distributed.
Immediately pour the hot mixture onto your prepared baking sheet. Spread it into a thin layer using a spatula, working quickly as it sets fast.
Break and enjoy: Let the brittle cool completely at room temperature for at least 2 hours, or until hard and brittle. Then, break it into pieces using your hands or a knife.
