Vegan Peach Galette

This Vegan Peach Galette is summer on a plate! The delicate, flaky crust is the perfect vessel for fresh, juicy peaches. Ready in one hour!

Ingredients
  

  • 2 cups pastry flour
  • 2 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon cornstarch
  • 1 stick vegan butter
  • 4 fresh peaches

Instructions
 

  • Preheat the oven to 400° F.
  • In a large mixing bowl, mix the flour, salt, and butter together until well blended.
  • Divide the dough into two portions. With a rolling pin, flatten out the dough.
  • Slice peaches and put inside a separate bowl. Mix in sugar and cornstarch and stir together until fruit is covered.
  • Add peaches to the center of the dough. Roll up the sides of the dough in towards the center.
  • Using a small pan, melt the vegan butter on the stove. Brush the edges with the butter and sprinkle sugar onto the crust.
  • Bake for 40 minutes.
  • Remove from the oven and let sit for 5-10 minutes.
