Vegan Peach Galette

- 2 cups pastry flour
- 2 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon cornstarch
- 1 stick vegan butter
- 4 fresh peaches

Preheat the oven to 400° F.
In a large mixing bowl, mix the flour, salt, and butter together until well blended.
Divide the dough into two portions. With a rolling pin, flatten out the dough.
Slice peaches and put inside a separate bowl. Mix in sugar and cornstarch and stir together until fruit is covered.
Add peaches to the center of the dough. Roll up the sides of the dough in towards the center.
Using a small pan, melt the vegan butter on the stove. Brush the edges with the butter and sprinkle sugar onto the crust.
Bake for 40 minutes.
Remove from the oven and let sit for 5-10 minutes.
