Vegan French Pear Tart
This vegan rustic pear tart is a charming dessert that is both elegant and inviting. It combines the natural sweetness of pears with a golden, flaky crust.

The Crust:
- 1 ½ cups all-purpose flour
- ¼ cup vegan butter cold and cubed
- ¼ cup granulated sugar
- ½ teaspoon salt
- 2-3 tablespoons ice water
The Pear Filling:
- 3-4 medium ripe pears
- 1 tablespoon lemon juice
- 1 tablespoon melted vegan butter
Topping:
- 2 tablespoons flour
- ¾ cups sugar
- 2 tablespoons cold margarine or butter

Make the Vegan Crust:
In a food processor, combine the flour, sugar, and salt. Pulse a few times to combine.
Add the cold vegan butter cubes and pulse until the mixture resembles coarse crumbs.
With the motor running, slowly add the ice water, one tablespoon at a time, until the dough just comes together. Be careful not to overmix.
Turn the dough out onto a lightly floured surface and gently knead it a few times to form a disc.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Prepare the Pear Filling
Wash and thinly slice the pears.
In a bowl, toss the pear slices with lemon juice to prevent browning.
Assemble the Tart:
On a lightly floured surface, roll out the chilled dough to a 10-12 inch circle.
Carefully transfer the dough to a 9-inch tart pan. Press the dough gently into the bottom and sides of the pan, making sure to get into the corners. You can use your fingertips or the back of a spoon.
Trim any excess dough from the edges.
Arrange the prepared pear slices in a decorative pattern over the dough.
Brush the pear slices with the melted vegan butter.
