Vegan Affogato

Vegan Affogato is made with vegan ice cream topped with fresh espresso. Ready in just 10 minutes!

Ingredients
  

  • 3-4 scoops scoops of vegan vanilla bean ice cream (or your favorite)
  • 1 shot espresso
  • 1 vegan salty dark chocolate bar (chopped)

Caramel

  • 1 cup coconut cream
  • ¾ cup brown sugar

Instructions
 

  • Mix brown sugar and coconut cream in a pot on the stove until bubbly.
  • Stir and let simmer for 5-10 minutes. As it cools, caramel will thicken.
  • Next, brew a shot of espresso.
  • Scoop the vanilla ice cream into a glass.
  • Pour the espresso over the ice cream.
  • Drizzle the caramel over the top.
  • Garnish with chopped vegan chocolate
