Peanut Butter Oatmeal Energy Bites

Ingredients
  

  • 1 cup rolled oats old-fashioned or quick-cooking
  • ½ cup creamy peanut butter
  • ¼ cup raisins
  • ¼ cup mini chocolate chips
  • 2 tablespoons hemp seeds
  • ¼ cup chopped pecans
  • 2 tablespoons maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg

Instructions
 

  • In a large bowl, combine the oats, peanut butter, raisins, chocolate chips, chia seeds, and pecans. Stir until well mixed.
  • Add the maple syrup, cinnamon, and nutmeg. Mix until everything is evenly incorporated and the mixture starts to hold its shape. If it feels too dry, add a teaspoon or two more maple syrup.
  • Using a teaspoon or your hands, roll the mixture into balls about 1 inch in diameter.
  • Place the energy bites on a baking sheet lined with parchment paper.
  • Refrigerate for at least 30 minutes, or until firm.
  • Enjoy! Store leftovers in an airtight container in the refrigerator for up to a week.
