- 12 ounces gnocchi
- 3 tablespoons olive oil
- 3 cloves garlic minced
- ½ teaspoon red pepper flakes
- 1 28-ounce can crushed tomatoes
- ½ teaspoon dried oregano
- ¼ teaspoon salt
- Freshly ground black pepper to taste
- ¼ cup chopped fresh basil (or ½ teaspoon dried basil) for garnish (optional)
- Vegan Parmesan cheese for garnish (optional)

Cook the Gnocchi according to package directions.
Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds.
Add the red pepper flakes and cook for another 30 seconds.
Stir in the crushed tomatoes, oregano, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until the sauce is thickened.
Add the cooked gnocchi to the sauce and toss to coat.
Garnish with fresh parsley and vegan Parmesan cheese, if desired.
