Fudgy Vegan Brownies

These Fudgy Vegan Brownies are chewy, chocolatey, rich, and completely gluten-free. They are truly a cut above the rest. Ready in just over an hour!

Ingredients
  

  • 1.5 cups almond flour
  • 12 tablespoon cocoa powder
  • 1 teaspoon salt
  • 1 cup olive oil
  • 1.5 cups coconut sugar
  • 8 tablespoon brown sugar
  • 6 tablespoon Just Egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chunks
  • Flaky salt to taste

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, whisk together the almond flour, cocoa powder, and salt.
  • In a separate bowl, whisk together the olive oil, coconut sugar, brown sugar, Just Egg, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Fold in the chocolate chunks and pour the batter into the prepared baking pan.
  • Sprinkle the top with flaky salt, if desired.
  • Bake for 45-50 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  • Let the brownies cool completely in the pan before cutting and serving.
