Cheesy Vegan Kale Chips

These Cheesy Vegan Kale Chips are healthy, delicious, and super simple to make. Ready in just 45 minutes!

Ingredients
  

  • 12 oz kale
  • 7 tablespoon nutritional yeast
  • 2 tbsp olive oil
  • ½ cup raw cashews
  • 1 teaspoon chili lime powder
  • ½ teaspoon chipotle powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon sunflower seeds

Instructions
 

  • Preheat your oven to 350 degrees.
  • Start by removing the tough stems from the kale leaves and then tearing the leaves into bite-sized pieces.
  • Spread the kale out on a large baking sheet and drizzle with olive oil, massaging it into the leaves with your hands.
  • In a blender, combine cashews, sunflower seeds, nutritional yeast flakes, chili lime powder, chipotle powder, salt, and pepper. Sprinkle this mixture over the kale and massage it in.
  • Bake for 15 minutes and then remove from the oven to turn over. Top with extra cheese mixture if needed.
  • Bake for another 10 minutes and remove from the oven.
  • Let sit and cool completely.
  • Serve and enjoy!
