The Salad
- 4 cups mixed salad greens such as romaine, spinach, arugula
- ½ cup crumbled vegan feta cheese
- ¼ cup red onion thinly sliced
- ¼ cup chopped walnuts
- 1 apple thinly sliced (such as Gala, Honeycrisp, or Fuji)
The Dressing
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 clove garlic minced
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- ¼ teaspoon black pepper
