Vegan Peanut Brittle

The dairy-free dessert features roasted peanuts nestled in a rich, buttery vegan toffee. It's rich, buttery, salty, and sweet.

Ingredients
  

  • 1 cup granulated sugar
  • ½ cup light brown sugar packed
  • ¼ cup water
  • ½ cup vegan butter
  • ½ cup vegan coconut cream full-fat for best results
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 ½ cups roasted and salted peanuts

Instructions
 

  • Line a baking sheet with parchment paper and have a spatula or wooden spoon ready.
  • Combine the sugars and water in a large saucepan over medium heat. Bring to a boil, stirring constantly, until the sugar dissolves. Then, reduce heat and simmer for 5-7 minutes, without stirring, until the mixture reaches 300°F (149°C) on a candy thermometer (or hard-crack stage - a small spoonful dropped in cold water hardens immediately).
  • Turn off the heat, and quickly stir in the vegan butter, cream of coconut, baking soda, and vanilla extract. Be careful, as the mixture may bubble vigorously.
  • Stir in the roasted peanuts until evenly distributed.
  • Immediately pour the hot mixture onto your prepared baking sheet. Spread it into a thin layer using a spatula, working quickly as it sets fast.
  • Break and enjoy: Let the brittle cool completely at room temperature for at least 2 hours, or until hard and brittle. Then, break it into pieces using your hands or a knife.
