Ingredients
  

The Salad

  • 4 cups mixed salad greens such as romaine, spinach, arugula
  • ½ cup crumbled vegan feta cheese
  • ¼ cup red onion thinly sliced
  • ¼ cup chopped walnuts
  • 1 apple thinly sliced (such as Gala, Honeycrisp, or Fuji)

The Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 clove garlic minced
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Prepare the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, garlic, lemon juice, salt, and pepper. Set aside.
  • Assemble the salad: In a large bowl, combine the salad greens, vegan feta cheese, red onion, chopped walnuts, and sliced apples.
  • Pour the dressing over the salad and toss to coat evenly.
  • Serve immediately.
