- 3 cups rolled oats
- ⅓ cup peanut butter
- ¼ cup olive oil
- 1 teaspoon vanilla extract
- ⅓ cup maple syrup
- ⅓ cup vegan chocolate chips
- ¼ cup dried cherries
Preheat the oven to 350 degrees.
Warm the peanut butter on the stove and mix together with olive oil, vanilla extract, and maple syrup.
In a bowl, mix oats and peanut butter, olive oil, vanilla extract, and maple syrup.
Spread the oats out of a pan lined with parchment paper and set in the oven for 20-24 minutes or until golden brown.
Remove from oven and let cool.
Add in the chocolate chips and dried cherries (or other dried fruits, nuts, or seeds).
Mix and serve!
