This Homemade Vegan Chocolate Chip Granola features wholesome ingredients, like oats, velvety peanut butter, dried cherries, and a hint of aromatic vanilla extract. Luscious maple syrup and chocolate chips supply the sweetness.

Ingredients
  

  • 3 cups rolled oats
  • cup peanut butter
  • ¼ cup olive oil
  • 1 teaspoon vanilla extract
  • cup maple syrup
  • cup vegan chocolate chips
  • ¼ cup dried cherries

Instructions
 

  • Preheat the oven to 350 degrees.
  • Warm the peanut butter on the stove and mix together with olive oil, vanilla extract, and maple syrup.
  • In a bowl, mix oats and peanut butter, olive oil, vanilla extract, and maple syrup.
  • Spread the oats out of a pan lined with parchment paper and set in the oven for 20-24 minutes or until golden brown.
  • Remove from oven and let cool.
  • Add in the chocolate chips and dried cherries (or other dried fruits, nuts, or seeds).
  • Mix and serve!
