    The dairy-free dessert features roasted peanuts nestled in a rich, buttery vegan toffee. It’s rich, buttery, salty, and sweet.

    What is Brittle?

    “Brittle” is a type of candy typically made with sugar, nuts, and butter. It’s known for its hard, candy-like texture and often breaks into small pieces when eaten. It typically starts with a sugar mixture, cooked to a hard candy stage. Often, various nuts like peanuts, almonds, pecans, or cashews are incorporated, adding a crunch and nutty flavor. As the name suggests, it’s hard and breaks into uneven pieces when snapped.

    How to Make Vegan Peanut Brittle

    In a large saucepan, combine sugar and water. Bring to a boil over medium heat, stirring constantly, until the sugar dissolves. Reduce heat and simmer, without stirring, until a candy thermometer reaches 300°F (149°C).

    Remove from heat and quickly stir in vegan butter, coconut cream, baking soda, and vanilla extract. Be cautious as the mixture may bubble vigorously.

    Stir in roasted peanuts until evenly distributed.

    Immediately pour the hot mixture onto the prepared baking sheet and spread it into a thin layer.

    Allow the brittle to cool completely at room temperature for at least 2 hours, or until hard and brittle. Break into pieces and enjoy.

    • 1 cup granulated sugar
    • ½ cup light brown sugar packed
    • ¼ cup water
    • ½ cup vegan butter
    • ½ cup vegan coconut cream full-fat for best results
    • ½ teaspoon baking soda
    • 1 teaspoon vanilla extract
    • 1 ½ cups roasted and salted peanuts

    • Line a baking sheet with parchment paper and have a spatula or wooden spoon ready.
    • Combine the sugars and water in a large saucepan over medium heat. Bring to a boil, stirring constantly, until the sugar dissolves. Then, reduce heat and simmer for 5-7 minutes, without stirring, until the mixture reaches 300°F (149°C) on a candy thermometer (or hard-crack stage – a small spoonful dropped in cold water hardens immediately).
    • Turn off the heat, and quickly stir in the vegan butter, cream of coconut, baking soda, and vanilla extract. Be careful, as the mixture may bubble vigorously.
    • Stir in the roasted peanuts until evenly distributed.
    • Immediately pour the hot mixture onto your prepared baking sheet. Spread it into a thin layer using a spatula, working quickly as it sets fast.
    • Break and enjoy: Let the brittle cool completely at room temperature for at least 2 hours, or until hard and brittle. Then, break it into pieces using your hands or a knife.
