Crafting these savory oven-roasted chickpeas is a breeze, requiring minimal effort and time – they’ll be ready in under an hour! To achieve the necessary crispy texture, it’s essential to ensure the chickpeas are completely dry before cooking. Additionally, It’s crucial to bake the chickpeas for an initial session before adding any oil or spices so that they are completely dried out.

Start Cooking
Get started by preheating the oven to 400 degrees.
Once chickpeas are completely dried out, add them to the oven and bake for 15 minutes. While they are baking, get your spices together and add them to a bowl. I use paprika, curry powder, onion powder, garlic powder, cumin, sea salt, and pepper. This combination of spices creates a delicious flavor of savory oven roasted chickpeas, but feel free to use your favorite spices. Once the chickpeas have baked for 15 minutes, remove from the oven and add olive oil on top. Then add chickpeas to the spice bowl and mix thoroughly.
Lay the chickpeas back out on the pan and cook for another 20 minutes, stirring halfway through. Turn the oven off but leave the chickpeas inside with the oven open. Once they reach desired crispiness, remove from oven. Let cool and serve.

Savory Oven Roasted Chickpeas
Ingredients
- 1 can chickpeas
- 1 tablespoon olive oil
- ½ teaspoon paprika
- ½ teaspoon curry powder
- ½ teaspoon onion powder
- ½ teaspoon sea salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ¼ teaspoon pepper
Instructions
- Preheat the oven to 400 degrees.
- Open and drain can of chickpeas and lay out to dry. Pat dry with paper towel.
- Add all spices to a bowl.
- Bake chickpeas (without oil or toppings) for 15 minutes.
- Remove from oven after 15 minutes. Toss 1 tablespoon of olive oil onto chickpeas. Then add chickpeas to the spice bowl and mix until fully covered with spices.
- Add chickpeas back to pan and bake for another 10 minutes.
- Stir chickpeas and bake for another 10 minutes.
- Turn off the oven but leave chickpeas in with the oven open for another 10 minutes to maximize crispiness.
- Remove from oven and add to bowl.
- Enjoy!
