I don’t say this lightly – these Fudgy Vegan Brownies are the best brownies I’ve ever had.
Over the years, I’ve tried making many vegan brownie recipes and tasted even more from bakeries and grocery stores. After a lot of playing around in the kitchen, I came up with these. I can say with certainty that these are a cut above the rest.

How to Make Fudgy Vegan Brownies
First, heat your oven to 350°F (175°C) and line your 8×8 inch pan with parchment paper. In one bowl, whisk together the almond flour, cocoa powder, and a pinch of salt. In another, combine the olive oil, coconut sugar, brown sugar, Just Egg, and vanilla extract until smooth. Gently pour the wet ingredients into the dry, stirring just until everything is incorporated. Don’t overmix! Fold in the chocolate chunks and pour the batter into your pan. Sprinkle with flaky salt. Bake for 45-50 minutes, or until a toothpick comes out with moist crumbs. Let the brownies cool completely in the pan before slicing and serving.
Tips
- Use parchment paper and/or vegan butter to avoid sticking to the pan.
- You can add other toppings to your brownies, such as chopped nuts, dried fruit, or vegan chocolate chips.
- Store leftover brownies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.

Instructions

- In a separate bowl, whisk together the olive oil, coconut sugar, brown sugar, Just Egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Fold in the chocolate chunks and pour the batter into the prepared baking pan.
- Sprinkle the top with flaky salt, if desired.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the brownies cool completely in the pan before cutting and serving.
