The first recipes for granola were more like cereals, made with oats, wheat, and corn. The name “granola” wasn’t coined until the late 1800s, when it was used as a trademark for a breakfast food made with rolled oats, nuts, and fruits.
Since then, the recipe for granola has changed quite a bit. Today, there are many different variations of granola, made with different combinations of oats, nuts, seeds, and dried fruit.
How to make Homemade Vegan Chocolate Chip Granola
First, you’ll need to oven-toast some old-fashioned rolled oats mixed with peanut butter. Toasting the granola will give it a delicious flavor and help the oats hold together when mixed with the other ingredients. For the final touch, add a drizzle maple syrup. This will help the granola clusters form as they bake.
Once everything is mixed together, simply spread the granola on a baking sheet and bake for about 20 minutes. After it’s cooled, simply stir in some chocolate chips, dried fruit, and nuts. I like to use a mixture of chocolate chips and dried cherries for a bit of extra sweetness. Let the granola cool completely before breaking it into pieces and eating.

Homemade Vegan Chocolate Chip Granola
Ingredients
- 3 cups rolled oats
- ⅓ cup peanut butter
- ¼ cup olive oil
- 1 teaspoon vanilla extract
- ⅓ cup maple syrup
- ⅓ cup vegan chocolate chips
- ¼ cup dried cherries
Instructions
- Preheat the oven to 350 degrees.
- Warm the peanut butter on the stove and mix together with olive oil, vanilla extract, and maple syrup.
- In a bowl, mix oats and peanut butter, olive oil, vanilla extract, and maple syrup.
- Spread the oats out of a pan lined with parchment paper and set in the oven for 20-24 minutes or until golden brown.
- Remove from oven and let cool.
- Add in the chocolate chips and dried cherries (or other dried fruits, nuts, or seeds).
- Mix and serve!
