Vegan Walnut Banana Bread

This Vegan Cinnamon Walnut Banana Bread is the perfect vegan breakfast or plant-based dessert that is packed with delicious flavors of cinnamon and bananas.

Ingredients
  

  • 4 medium ripe bananas mashed
  • 2 teaspoons cinnamon
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • ¼ cup unsweetened applesauce
  • ¼ cup Just Egg egg substitute
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • In a large bowl, whisk together the mashed bananas, granulated sugar, brown sugar, applesauce, and Just Egg.
  • In a separate bowl, whisk together the flour, baking soda, cinnamon and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the walnuts.

  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
