Ingredients

Dry:

  • 1 ¾ cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon

Wet:

  • 1 ½ cups unsweetened almond milk
  • ¼ cup melted vegan butter or coconut oil
  • cup Just Egg
  • 1 teaspoon vanilla extract

Chocolate:

  • ½ cup semisweet chocolate chips

Toppings:

  • 1 cup fresh or frozen berries blueberries, strawberries, blackberries, etc.
  • 1 pinch powdered sugar
  • 1 drizzle maple syrup
  • 1 handful chocolate chips

Instructions

  • Preheat your waffle iron. Aim for medium-high for slightly crispy waffles or medium for extra fluffy ones.
  • Whisk together dry ingredients - flour, sugar, baking powder, cinnamon, and salt - in a large bowl.
  • In a separate bowl, whisk together wet ingredients including almond milk, melted butter/oil, Just Egg, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and gently fold until just combined. A few small lumps are okay!
  • Gently fold in the chocolate chips into the batter.
  • Pour enough batter onto your preheated waffle iron to fill the sections, making sure you don't overload. Close the lid and cook for 15 minutes, or until golden brown and crispy. Keep an eye on it!
  • Serve your waffles hot. Drizzle with maple syrup, powdered sugar, extra chocolate chips, and berries.
