How to Make Vegan Cinnamon Walnut Banana Bread
To begin, preheat your oven to 350 degrees Fahrenheit and grease a 9×5-inch loaf pan. In a large bowl, whisk together one cup of mashed ripe bananas, half a cup of granulated sugar, a quarter cup of packed light brown sugar, a quarter cup of unsweetened applesauce, and a quarter cup of Just Egg.
In a separate bowl, whisk together two and a quarter cups of all-purpose flour, one teaspoon of baking soda, and one teaspoon of salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in half a cup of chopped walnuts, if using.
